Matsutake Mushrooms- The matsutake is found in various cuisines and areas of the world, from America, to Europe, to Asia. They are most prized in Japanese dishes where they are favored for their aroma, unique taste and flavor, and their meaning (happiness and even fertility). In all cultures it is a prized mushroom, it is not farmed and is always harvested in the wild.
Chanterelles Mushrooms- Though records of chanterelles being eaten date back to the 16th century, they first gained widespread recognition as a culinary delicacy with the spreading influence of French cuisine in the 18th century, when they began appearing in palace kitchens. For many years, they remained notable for being served at the tables of nobility. Nowadays, the usage of chanterelles in the kitchen is common throughout Europe and North America. In 1836, the Swedish mycologist Elias Fries considered the chanterelle “as one of the most important and best edible mushrooms.
Porcini Mushrooms- We took a little artistic liberty in calling the Porcini the Italian Dream as it is found in the wild all over the Northern Hemisphere and in a variety of cuisines. They are eaten and sautéed with butter, ground into pasta, in soups, and in many other dishes. They are found in many Italian pasta dishes, and carrettiera pasta sauce and porcini risotto are both staples of autumn Italian dining. The porcini is known for it’s large protein punch, from a texture and nutrition aspect the porcini makes a great meat replacement.
If you get a chance, try one of our new mushrooms and we are confident you will enjoy them.
